Spray a large saucepan with low-calorie cooking spray and place over a medium heat. Add the onion, garlic and chili and cook for 5 minutes until softened. 2. Add the cumin, garam masala, turmeric and tomato purée and cook for 1 minute until fragrant. 3. Add the chicken and cook for 3-4 minutes until browned. 4. Add the flour and chicken stock and bring to the boil, stirring well. 5. Reduce the heat and simmer for 10 minutes until the chicken is cooked through. 6. Stir in the yogurt and coriander and cook for 1-2 minutes until heated through. 7. Serve with rice and naan bread, if desired.
My inspiration for this recipe came from a recipe I wrote for Slimming World Beef Curry last year. It is my job to make batches of sauce and freeze them in small portions.
